Kitchen notes on tortillas
Warm before folding
Cold tortillas crack. Warm them for 20 seconds per side in a dry skillet, or wrap a stack in a damp towel and microwave for 30 seconds.
Corn versus flour
Corn tortillas are naturally gluten-free and hold up in sauce, which makes them right for enchiladas. Flour tortillas are softer and better for burritos and quesadillas.
Storage
Once opened, keep tortillas sealed in the fridge for about a week. Freeze them with parchment between each one so you can pull out just what you need.
Questions about tortillas
How do you keep quesadillas from getting soggy?
Use medium heat, a little butter or oil in the pan, and not too much wet filling. Press lightly with a spatula and flip once when the bottom is golden.
Can you freeze burritos?
Yes. Cool the filling first, wrap each burrito in foil or plastic, and freeze for up to 3 months. Microwave from frozen, or bake at 375°F for 30 minutes.
What can I make with stale tortillas?
Cut them into wedges and bake into chips, crisp strips for soup or migas, or layer them into a tortilla casserole where the sauce softens them.
