Kitchen notes on broccoli

Roast it hot

Toss florets with oil and salt and roast at 425°F for 18 to 22 minutes. Leave space between pieces so they brown instead of steaming.

Use the stems

Peel off the tough outer skin and the stems are sweet and tender. Slice them into coins for stir-fries or shred them for slaw.

Storage

Keep broccoli unwashed in a loose or perforated bag in the crisper for 3 to 5 days. Wash it just before cooking.

Questions about broccoli

How do I get my kids to eat broccoli?

Roast it until crispy, serve it with a dip they already like, or chop it finely into tots, fritters and pasta sauces. Offering it often without pressure matters more than any recipe.

Is frozen broccoli as good as fresh?

Nutritionally it is very close, and it is great in soups, casseroles and pasta. For crispy roasted broccoli, fresh works better, or roast frozen florets straight from the freezer at 450°F.

How long do you steam broccoli?

Steam florets for 4 to 5 minutes until bright green and just tender when pierced with a knife.
