Kitchen notes on rotisserie chicken

Shred it while it’s warm

The meat pulls off the bone easily while the chicken is still warm. Use two forks, or clean hands, and save the bones for stock.

Two hours, then the fridge

Refrigerate the chicken within 2 hours of buying it hot, and use it within 3 to 4 days. Freeze shredded meat in 2-cup bags for 2 to 6 months.

Taste before you salt

Store-bought rotisserie chickens are seasoned with plenty of salt. Taste the dish before adding more, especially soups and sauces.
