What to make with eggs

With eggs you can make a frittata, shakshuka, egg fried rice, breakfast burritos, quiche, egg muffins, deviled eggs or a quick egg drop soup. Most of these clear out leftover vegetables and cheese, and many are on the table in 20 minutes.

Kitchen notes on eggs

Freshness check

Refrigerated eggs keep 3 to 5 weeks after you buy them. A very old egg will float in a glass of water; one that sinks is fine to use.

Easier peeling

Older eggs peel more easily than very fresh ones. Start them in boiling water, cook 11 minutes, then move them to ice water for 5 minutes.

Cook through for kids

For young children, cook eggs until the whites and yolks are firm. Egg dishes like casseroles and quiche are done at 160°F in the center.

Room-temperature eggs

For baking, set eggs in warm tap water for 5 minutes instead of leaving them out.

Questions about eggs

What can I make with a lot of eggs?

A frittata or crustless quiche uses 8 to 12 eggs, egg muffins use a dozen, and a batch of breakfast burritos for the freezer can use 18. Lemon curd and custard are good sweet options.

How long do hard-boiled eggs last?

Hard-boiled eggs keep one week in the fridge, peeled or unpeeled. Store peeled eggs in a covered container.

Can you freeze eggs?

Yes, but not in the shell. Whisk them, pour into a muffin tin or freezer bag, and freeze for up to a year. Cooked egg muffins and burritos freeze well for 2 to 3 months.
