Kitchen notes on chickpeas

Rinse canned chickpeas

Draining and rinsing removes much of the salt and the starchy liquid. Pat them very dry if you want them to crisp.

Save the aquafaba

A can equals

One 15-ounce can holds about 1½ cups of drained chickpeas, equal to roughly ½ cup dried chickpeas once cooked.

Storage

Once opened, keep chickpeas covered in the fridge for 3 to 5 days, or freeze them flat for up to 3 months.

Questions about chickpeas

Do you need to cook canned chickpeas?

No. Canned chickpeas are fully cooked. You can eat them straight from the can after rinsing, or warm them through in a recipe.

How do you make roasted chickpeas crispy?

Dry them thoroughly, toss with a little oil, and roast at 400°F for 25 to 35 minutes, shaking the pan halfway. Add seasoning after roasting so spices do not burn.

Are chickpeas a good protein for kids?

Yes. A half cup has about 7 grams of protein plus fiber. For young children, mash or halve them to reduce the choking risk.
