Kitchen notes on canned tuna

Light or albacore?

Canned light tuna, usually skipjack, is lower in mercury, and the FDA lists it as a best choice at 2 to 3 servings a week. Albacore (white) tuna is a good choice at 1 serving a week. A child’s serving is about 1 ounce at ages 1 to 3, 2 ounces at 4 to 7, 3 ounces at 8 to 10 and 4 ounces from 11.

Water or oil?

Tuna in water is leaner and best for tuna salad. Tuna in olive oil is richer and better in pasta, where the oil becomes part of the sauce.

Drain it well

Press the lid down hard to squeeze out the liquid, or the tuna salad turns watery by lunchtime.

Storage

Move leftover tuna out of the can into a covered container and use it within 3 to 4 days.

A drained 5-ounce can of light tuna in water has roughly 25 to 30 grams of protein, depending on the brand. A 3-ounce serving has about 20 grams.

Covered in the fridge, use it within 3 to 4 days. Store it in a container rather than the opened can.
